2 new recipes!

2 new recipes for you to try!

This one we have about once every couple of months. I have been making it for a few years. It is good and thought I would share.

SALISBURY STEAK

1 1/2 lb. extra lean ground beef
1 pkg (6oz) stove top stuffing mix for chicken
1 1/2 cups water divided
3/4 cup chopped onions
1 pkg. (8oz) fresh mushrooms, sliced

1/2 cup BBQ sauce

1. Preheat oven to 375. Mix meat, stuffing mix, 1 1/4 cup of the water and the onions until well blended. Shape into six 1/2" thick oval patties. Place on baking pan.

2.Bake 25 minutes or until cooked through.

3. Meanwhile spray large nonstick skillet with cooking spray. Add mushroom, cook on medium-high heat 5 minutes or until lightly browned, stirring occasionally. Add BBQ sauce and remaining 1/4 cup water. Reduce heat to low, simmer 1-2 minutes or until sauce is heated through. Serve over the patties.This meal can be easily made with generic brand ingredients and goes great with mash potatoes!




FIESTA MEATLOAF

2 lb. lean ground beef
1 pkg (6oz) stove top stuffing mix for chicken
1 cup water
2 eggs, beaten
2 tsp chili powder
1/2 cup salsa, divided (thick n' chunky)
3/4 cup mexican style finely shredded cheddar jack cheese

1. Heat oven to 375. Mix all ingredients except 1/4 cup salsa and 1/4 cup cheese.

2. Shape into oval loaf in 13x9 inch baking dish, top with remaining salsa.

3. Bake 1 hour or until done. Top with cheese, bake 5 minutes or until cheese is melted. LEt stand 5 minutes.



Of course these pictures are not mine. Although my food is edible it is rarely this pretty. I hope you enjoy this 2 simple and yummy recipes! My family did!
