YUMMO! YUMMO! YUMMO!

I have been going through some recipes lately that I love and thought I would share. All of these are very simple to follow and make! Enjoy!

Sausage and Vegetable Calzones

Ingredients:
1/2lb. Italian Sausage
1/2lb. sliced fresh mushrooms
1 large red pepper, cut into strips, halved
1 tub (10 oz) Philadelphia Savory Garlic Cooking Creme
1 cup shredded Mozzarella cheese
1 can (10 oz) refrigerated pizza crust


1. Heat oven to 400F
2. Brown sausage with mushrooms and peppers in large nonstick skillet on medium-high heat. Drain; return to skillet. Stir in cooking creme and mozzarella. Remove from heat.
3. Unroll pizza dough on clean work surface. Pat out to 15x11-inch rectangle; cut lengthwise in half then cut each piece crosswise into thirds. Top dough rectangles with sausage mixture; fold in half. Seal edges with fork.Place on baking sheet sprayed with cooking spray.
4. Bake 15 minutes or until golden brow.



CREAMY CHICKEN FAJITAS

1 lb. boneless skinless chicken breast, cut into strips
1 cup each thin onion slices and green pepper strips
1 tub (10 oz) Philadelphia Santa Fe Style Blend Cooking Creme
8 flour tortillas (6 inch), warmed
1 cup mexican style finely shredded cheese


1) cook chicken and vegetables in large skillet on medium heat 6-7 minutes or until chicken is done.
2) Add cooking creme, cook and stir 2 minutes
3) Spoon down centers of tortillas, top with shredded cheese. Fold over.

(I have also made this with shrimp)


SQUASH CASSEROLE

1 large onion
1/2 stick butter
3 cups cooked squash (fresher the better)
1 cup crushed Ritz crackers, plus additional for top
1/2 cup sour cream
1 tsp each salt, pepper and garlic powder
1 cup shredded cheese

1) Preheat oven to 350F.
2) Saute onion in butter for 5 minutes. Remove from pan and mix all ingredients. Pour into greased dish, top with crackers.
3) Bake for 25- 30 minutes.
